Learning to cook with nuts


Nuts are a completely natural, highly energy dense, full of nutrients such as protein and key minerals, and have a variety of distinct flavours. The Army school of catering teaches their chefs how important using nuts can be in certain recipes and for vegetarian, paleo and vegans. They form the nutritious basis of many hearty vegetarian dishes. They typically have a long shelf life and are easy to transport and store. They make a great addition to a healthy diet, especially when undertaking physical training and so learning to include nuts in dishes is an important part of becoming a British army chef. Nuts can be added whole, roughly chopped, or ground to add a variety of different textures to dishes.

Nuts can be used in catering in a variety of ways. These include:

  • Almonds used in sweet products. Can be either baked, ground, whole or split.

  • Walnut used in salads, sweet products and vegetarian dishes.

  • Coconut used in sweet products, curries, ice cream and vegetarian dishes.

  • Chestnuts used in stuffings, salads, sweet products and vegetarian dishes.

  • Pecan used in sweet products, ice cream and vegetarian dishes.

  • Pistachio used in sweet products, stuffings, ice cream and vegetarian dishes.

  • Cashew used in stir fried and asian dishes
